Italian SME developed new technology for foodstuff rapid pre-cooling.
The machine is composed of a unit endowed with a fan and an integrated tarp. An electronic instrument (PLC-programmable logic controller) is placed on board or remote panel, double probes are inserted in the pulp fruit. The power fan pulls the cold air from the cold room crossing the product and allowing to get the pre-colled in 1/3 of the time employed for the normal process.
